Have relevant Matomo activity log

Current Behavior

Some settings update do not trace in the activity log.
Some other are wrongly traced.

Possible Solution

Implement the logging where missing 😉, fix it where misconfigured.

Steps to Reproduce

1. Go to Administration > System > General Settings and update 📝 some configuration in Archiving settings section, then press [Save] button
2. Go to Administration > Diagnostic > Activity log: No activity has been logged ⚠️
3. Go to Administration > System > General Settings and update 📝 some configuration in Email server settings section, then press [Save] button
4. Go to Administration > Diagnostic > Activity log: No activity has been logged ⚠️
5. Go to Administration > System > General Settings and update 📝 any other configuration (eg. in Configuration for server variables used by GeoIP 2 server modules section)
6. Go to Administration > Diagnostic > Activity log: phew! a log is visible 👌
7. Go to Administration > Personal > Settings and update 📝 the Language parameter
8. Go to Administration > Diagnostic > Activity log: the activity log is wrong as only the email is mentioned as updated (whereas it has not) ⚠️
   
9. Go to Administration > Privacy > Anonymize data and update 📝 the Replace User ID with a pseudonym parameter
10. Go to Administration > Diagnostic > Activity log: the activity log is wrong as only the ip anonymization is mentioned as updated (whereas it has not) ⚠️:
    
11. Go to Administration > Privacy > Anonymize data and update 📝 the Anonymize Order ID parameter
